GOD USES BROKEN EGGS





Phew! Are you like me? You tummy is full from all the Memorial Day weekend bar-b-ques and picnics. It is a great time to get together with our families and friends. A time to build more memories.

These are the sweet days of our lives. And speaking of sweetness, today's recipe comes from my Aunt Dorothy Buffham, who baked this impossible pie many years before Bisquick came out with impossible pie recipes. The recipe is from the 1960's and was a family favorite. I have substituted the serving with less calories packed goodness (Cool Whip instead real whipped cream). But I will leave it to you to decide how to serve it!

IMPOSSIBLE COCONUT PIE

4 Eggs BROKEN

1/4 Cup Butter

7/8 Cup Sugar

1/2 Cup All Purpose Flour

1/4 tsp. Salt

1/2 tsp. Baking Powder

2 Cups Milk

1 Cup Coconut shredded

1 tsp. Vanilla

Place all ingredients in blender at one time and blend until mixed. Pour into a 10" buttered pie pan. Bake at 350 degrees for (1) hour. When done, the crust will be on the bottom, the custard will be in the middle and the coconut will be on the top.

 

Topping

1 Can Dole Unsweetened, Crushed Pineapple well drained

1 Container Cool Whip Light

 

Mix pineapple into cool whip. Place in mounds on top of pie just before serving. Drink the juice - you owe it to yourself♥

 

Imagination: Add chocolate chips in to blender, or chopped pecans. Top with sliced bananas and Cool Whip.

"Comforting Peace"
In this scripture, Jesus was trying to explain to his disciples that He would be leaving them shortly.  However, the main thing he wanted to instill in them was "they were not going to be alone!".  Jesus told them that when He left, the "Holy Spirit', also known as "The Comforter" was going to be there for them.  You will not know the comfort of the Holy Spirit unless you have accepted Jesus as your Saviour!  This comfort is better than any comfort you may find in food!  Jesus is the Bread of Life!  Our spiritual comfort food!
