GOD USES BROKEN EGGS

 

Deb is writing today about graduation and seasons in our lives. They come and go so fast, and so often we miss the all the little miracles each one offers. We see our children as babies, and hold onto that picture even when they are full grown. What a wonderful gift of remembrance the Lord has given us in parenthood.

My kids loved ham, eggs and pancakes. My grandchildren love it when I make pancakes for them, and we make them fun. On a vacation in Kona, Hawaii, Wynter and I went to the best breakfast place in town - a restaurant which served pineapple/macadamia nut pancakes, with rich home made coconut syrup. I will always remember them.

These days, my daughter is gluten-free because of health issues, as are a lot of my friends. I went searching for a gluten-free pancake which would satisfy the pancake loving child in all of us. I found one, which I am sharing. It is a 5-star rated recipes.

Season them how you love them the most, for any season in your life.

GLUTEN FREE PANCAKES

1 Cup Rice Flour

3 Tbsp. Tapioca Flour

1/3 Cup Potato Starch

4 Tbsp. dry Buttermilk Powder

1 packet Sugar Substitute

1-1/2 tsp. Baking Powder

1/2 tsp. Baking Soda

1/2 tsp. Salt

1/2 tsp. Xanthan Gum

2 Eggs BROKEN

2 Cups Water

 

In a bowl, mix or sift together the rice flour, tapioca flour, potato starch, dry buttermilk powder, sugar substitute, baking powder, baking soda, salt, and xanthan gum. Stir in eggs, water, and oil until well blended and few lumps remain. Cook as usual in hot, greased skillet. Makes 10 pancakes.

 

Imagination: Use Egg Beaters instead of 2 whole eggs to reduce fat and cholesterol. Substitute these for rice, potatoes or pasta for evening meals. Add drained Mexi-Corn to the batter and serve with chili or carne asada. Let us know what your passionate pancake is!

FIXING THE BROKENESS






There is a time for everything, and a season for every activity under heaven: [Ecclesiates 3:1]

My husband and I went to our youngest sons graduation last night.  I know a lot of you are experiencing this time of life where your children are graduating. It's kinda a happy moment and a sad moment.  They are growing up and becoming adults on their own.  Maybe they will not need you as much now.  So not only are they having a seasonal change but you are too.  What do you do now with your life?  You are no longer have to schedule soccer ball practice, or run to the store late at night to get items for the school project. 



The seasons in our lives not only affect ourselves, but they affect others around us too.  Whether your season is giving birth to a new baby, sending your child off to their first day of school, watching them graduate, or someone you know is retiring.  There will be a change in your life.  We should not just think about the major milestones in our lives, but celebrate life itself.  


Paul says: "Be thankful in all circumstances, for this is God's will for you who belong to Christ Jesus."  No matter what season you may be going through today, find a way to celebrate and rejoice in it!
