GOD USES BROKEN EGGS




I love how we can run across interesting things when we are least expecting them! That's what happened to me today with our recipe. I discovered this as a posting from a gal whose husband insists this is the only way to serve spinach in their home! I was intrigued, and then I wanted some!

It's a lovely time whenever we can bring home fresh spinach. And what a wonderful meal to serve up to family or guests.

SPINACH ENCHILADA VERDES


1 Cup Light Sour Cream

1 (7) oz. Can Green Salsa

1 Bunch Fresh Spinach - chopped

2 Cups Monterey Jack Cheese - shredded

1 Package Corn Tortillas

 

Mix half the sour cream and green salsa, and spread into bottom of a 13x9, greased baking dish. Place a small amount of the salsa and sour cream in the center of 12 corn tortillas. Divide the chopped spinach evenly between each tortilla. Sprinkle with the cheese. Roll each tortilla and secure with a tooth pick. Place in the pan, and spread the remaining salsa and cheese over the top

 

Bake in preheated 350 degree oven 20-25 minutes until browned and heated through. Serve with chicken, pork or steak. 

 

Imagination: I would be adding goat cheese to this dish for the filling, instead of the Monterey Jack, which I would use on the top. Try mixing up the Monterey Jack with some Pepper Jack. Or try grated Baby Swiss with jalapeno slices.

FIXING THE BROKENESS

Then all the people of the region of the Gerasenes asked Jesus to leave them, because they were overcome with fear. So He got6 into the boat and left.

(Jesus + Miracles = FEAR??)


It seemed wherever Jesus would go, He would draw a crowd.  However, not everyone was pleased to have him around!  Sometimes our fear can overwhelm us and take control of our lives!  In this verse, the people were overcome by their "fear" and they asked Jesus to leave.  They had just witnessed a miracle but yet, didn't really want any part of what Jesus had to offer.

How about today?  Have you just heard enough about Jesus that you are afraid to hear more?  When you hear you have to "surrender your all", does that make you want to run in the other direction?  Here is a word for you today: "Do Not Fear!".  This sentence is written in the Bible over 360 times!  This will give you one a day for a year to "Not Fear"!!!  Wouldn't you rather have someone their with you who KNOWS what you are going through?  You don't have to go through your life alone.  Do not allow the fear of Christ coming in your life, cause you to ask Him to leave you.  The Bible tells us over and over again, God is with us, He will not leave us nor will He forsake us.

He is waiting for you to ask...
