GOD USES BROKEN EGGS

I got lost in my mother's recipe box this morning; unfolding pieces of paper, and fixing bent corners as I looked at each recipe, written by so many different hands. Some of the writing was familiar, some of it not so much. Yet, my mother could write so tiny and so precisely, I found myself smiling. She was an absolute, unforgiving perfectionist in most things, and yet she wrote her recipes on the back of whatever piece of paper she found.


Today's recipe I found carefully written on the back of an old Safeway-Exclusive Leaflet Recipe. It isn't newspaper, and she has a few of the Safeway recipes. But it was carefully cut out. It is a recipe for candied squash. Mom's recipe is carefully written on the back.


I think I will share both these recipes with you today - they date back 40 years, at least. Enjoy!

CLAM & CORN CASSEROLE

 

 

2 Cups Saltine Crackers coarsely crumbled

1-1/2 Cups Milk

3 Eggs BROKEN AND WELL BEATEN

2 (7.5 oz) Cans Clams - minced

1 Cans Niblets Corn - drained *

1/4 Cup Onion - finely chopped

2 Tbsp Green Pepper - finely chopped *

1 tsp. Worchestershire Sauce

1 Cup American Cheese - shredded

1/2 tsp. White Pepper


* I suggest substituting Green Giant Mexicorn; packs more flavor!


Mix together cracker crumbs, milk and eggs. Stir in undrained clams, corn, onion, green pepper, Worchestershire sauce and white pepper. Butter a 1-1/2 quart casserole dish, and pour in mixture. Bake 350 degrees for 50 minutes, or until set. Cover with cheese and bake 5-10 minutes more, until cheese is well melted. 

 

Imagination: Use baked casserole for burrito filling; just add fresh salsa and shredded cabbage (or lettuce). Substitute Pepper Jack cheese for the American cheese. Substitute cooked jasmine rice for the crackers. Eliminate the crackers and double the eggs to make beautiful brunch omelettes. As always, you can substitute Egg Beaters to reduce fat and cholesterol.



CANDIED ACORN SQUASH

 


1 Whole Danish (Acorn) Squash

1/4 Cup Butter

1/2 Cup Brown Sugar

2 Tbsp. Water

2 Tbsp. Dark Corn Syrup

1/4 tsp. Nutmeg


Boil whole squash in deep kettle 15 minutes. Drain, split; remove seeds. Peel and cut into chunks. Melt butter in a heavy pan. Stir in sugar, syrup, nutmeg and water. Add squash. Toss well. Simmer covered for 10 minutes until squash is tender. Spoon into serving dish and sprinkle with brown sugar to serve.


Imagination: Scoop squash from skin, leaving skin intact. Use the skin as serving bowl. Substitute cinnamon for the nutmeg.

The heart is a working muscle busy pumping blood around your body. Without the blood flowing through your veins - your body would shut down. Since the heart is a muscle; you need to exercise it like you would other muscles.  You need to eat the right kind of foods to maintain a healthy living. Keeping your heart (your inner man) healthy is to maintain heathy morales and values.  It helps to protect your mind from worldly garbage.  We not only need to protect our "outward body" we need to protect what is inside - "the inner body".  Not only eating good foods for the body, we need to chew on God's word for our spiritual food daily too.

Dear Lord today help me to keep both my "outward body" and "inner body" free from junk food and bad thoughts.  I thank you for the heathy life I may obtain through you. Amen!
