GOD USES BROKEN EGGS


I have been busy, busy, busy getting ready for my daughter Wynter, and grandson Jonathyn to come visit. It is the celebration time for my grandson Ry's graduation from high school. Ry is autistic, and this is such a special event. We are so proud of him, and he will honestly tell you straight up, he is proud, too.

As I thought about what recipe to share this morning, I remember how much Wynter loved a special desert my mother made. It was a hit at every ladies' function back in the 1950's. The original recipe was full of calories and sweet goodness. I had to switch it up a bit for our home, but I am posting the original recipe here today.

MARSHMALLOW DELIGHT

60 Marshmallows

2 Cups Milk

2 Cans Crushed Pineapple (large) - drained

1 Pint Whipping Cream

28 Graham Crackers - crushed fine

 

Dissolve marshmallows in milk until melted, over low-moderate heat. Cool. Whip the cream (no sugar). Reserve 1/2 cup of crushed graham cracker crumbs; spread the rest in 13x9x2 pan. Add drained pineapple to cooled marshmallow mixture and mix well. Fold in the whipped cream to the pineapple-marshmallow mixture. Spoon mixture over the graham cracker crumbs. Sprinkle reserved crumbs on top. Chill at least 8 hours. Serve cold.

 

To lessen the fat and calories, I use lactose free, calcium enriched skim milk and sugar free Cool Whip (12 oz).

 

Imagination: Toast coconut lightly in hot, ungreased skillet, or in oven. Add to the graham crackers. You can substitute Vanilla Wafers or crisp coconut cookies for the graham crackers. Honestly, this is so good you probably won't want to change it up!

Fixing the Brokeness

In Memory of James Fagg: (My uncle)

I received a phone call this morning from my parents to let me know that my uncle had gone on to be with the Lord.  It so reminded me of this scripture to know that in one persons life, things are happening and are so glorious and worth rejoicing as Sunny and her family celebrate Ry's graduation.  What a mile stone!  But, I also know that we can celebrate too.  Although we will not see my uncle here on earth, I know that he is in heaven with the other loved ones that have passed on too.  He is catching them up on the things that are happening here on earth.  But best of all, he is with Jesus!  I will miss his stories, as he was the best story teller ever!  But the past few years he had stopped being the uncle I remember as he battled with the horrible disease of Alzheimer.  Today he is pain free, and I celebrate the fact that he has reunited with family and friends. 
The seasons we go through in life are sometimes difficult times, but they all have purpose and meaning.  We need to not question God's meaning behind them, but learn to embrace knowing He is carrying us through them all.
Congratulations to you Ry man, and I love and will miss you Uncle James!

  1. I rejoice that your uncle is home with the Lord, Deb, and is probably busy telling his stories all over again! What a celebration Heaven is having.. remember, the rose still grows beyond the wall♥
